Fabulous Fall Day…

We went for a walk and enjoyed the pretty Fall colors.  Even in Texas we are seeing some leaves changing!

Natural beauty…

So pretty…these colors inspired some new necklaces…

Horse apples are all over the ground…they look like tennis balls!

As we were walking past the creek I thought I saw something moving… as I got closer I saw it was this Heron.  He came out of his hiding spot and flew away…but I caught a shot of him before he got away!

We heard some noise in a tree nearby and look who we saw.  And he saw us right back!

All that exercise makes a squirrel hungry!  This lil guy put on quite the show so cute!

Crock Pot Roast Mexican Style For Shredded Beef Tacos

Heat a little oil in a pan to brown  your roast on both sides to sear in the juices.

Salt and Pepper your roast ( I used a chuck roast) on both sides.

Add 1 can of crushed, or diced tomatoes I used Fire Roasted diced.  One can of chopped green chiles mild… also 1/2 c. water to crock pot.

Add some diced onion, bell pepper, and 3 to 4 cloves minced garlic.

Add your spices…you can add more or less depending on your spice level…this is what I used…1 t. cumin…2 1/2 t. mild chili powder….2 t. chipolte powder…1 t. ancho chili powder…1/4 t Goya Adobo powder…dash of ground mex oregano… dash mex thyme…salt and pepper… there are a couple spices in photo I did not use like garlic powder because I used the minced garlic but if you don’t have fresh use the powder…like I always say nothing has to be exact sub with what you have on hand!

Your sauce bas is ready for your browned roast…

Place your roast on top of the sauce…

Deglaze your pan add 1/4 cup of dry white wine or chicken, veggie or beef broth…I used wine…after stirring a couple of mins  pour in 1/4 cup water stir 2 more mins…

pour glaze over your roast.. I set crock pot on high for 30 mins…the turned to low and set for 6 1/2 to 7 hours…

When it is done take your roast out onto cutting board it will fall apart shred with fork.

Ladle out the goodies onions peppers…

Also ladle out 1 cup of juice…put in blender with onions and peppers and 2 tablespoons of fresh cilantro puree…

Put your shredded beef and puree in a pan stir over med heat for a few mins…then cover turn to simmer for 5 mins…. enjoy with tortillas of your choice or crispy shells and all your favorite garnishes….

WildLife Kingdom…

We were at the Dallas Arboretum this weekend to see the Chihuly Glass exhibit.  We had a great, time took tons of photos, so many in fact I will be blog posting 3 segments!  Here is the first… WildLife Kingdom!  We saw a bench under a tree and went to sit a bit.  I’m always looking around for something to break out my macro lens…I didn’t need to look far, just down …next to the bench we were sitting I see a snake trying to eat a huge frog.  The frog was just to big the snake gave up and slithered away but I can’t believe I caught it on camera!

After we saw all there was to see at the Arboretum we took a drive through White Rock Lake.  I had forgot how pretty it is…when I first moved to Dallas we would come to White  Rock a lot…But I had not been in over 20 years.  Nature and beauty were everywhere!

This isn’t exactly wildlife, but there on a bench sat a tiny bubble someone had blown and I said quick honey had me the macro lens, the things we do for the perfect capture!

Texas State Fair Fun…

Well we had not been to the State Fair in about 8 years…So we decided to go this year and we had so much fun.  We ate so much food because that’s what you do at the Fair!

This was the main reason I wanted to visit the fair this year The Chinese Lantern Display…

My friend Amber went with me to see the exhibit…we both loved it!

We had so much fun with our friends at the fair.  While we ate our way through…here is a list of goodies we tried…fried margarita, fried lemonade, turkey leg, cotton candy, candy apple, nachos, fried bacon cinnamon roll, funnel cake, twisted tators, sausage on a stick, corn dog, fried jambalaya, roasted corn…oh my!

Midnight Wish…

Two “one of a kinds” from my Midnight Wish Collection.  Vintage key, agate, labradorite, pyrite and crystals make these pieces unique and fun.

The next day was our first chilly day..we got to dress the models up in great Fall clothes!

As the day went on it got a little colder and we tried to dress the girls warmer while accessorizing at the same time of course!
