Michele’s Toscana Zuppa….

I really like Olive Garden Zuppa Toscana soup.  I have seen several recipes for it and decided to do my own take on it… same great flavor but a lighter version…Well it came out great!  I used two russet potatoes and one sweet potato, onion, curly kale, italian sausage, and a can of cannelli beans (white beans any kind will do).  For the broth I used 1 box of veggie broth and 1 can chicken broth and 1/2 cup of 2% milk , I mashed a little bit of the potatoes to make it thicker and I seasoned it with garlic , salt,  pepper and italian seasoning and a bit of fresh flat parsley.  In the words of Rachel Yummo!!
