Green Beans Asian Style With Shiitake Mushrooms

Simple quick breakfast…Gluten-free oatmeal with almond milk and fresh berries topped off with a honey drizzle…

For dinner it was stir fry… Green beans with shiitake mushrooms served with Szechuan Pork over brown rice…To make the green beans Blanch first in boiling water for 2 mins. then dunk in ice water to stop cooking drain set aside…in a large pan or wok add a bit of canola oil and some sesame oil heat on med. add a bit of minced garlic and ginger some chopped onion cook on med.high heat for a few mins….while thats cooking mix 1/4 cup soy sauce, 1/4 cup water and 1/4 cup chicken or veggie broth and 1 tsp. cooking wine or cooking sherry…to that 1 tsp. corn starch and 1 tsp. chili sauce (such as Sriracha) you could also add 1 tsp black bean paste if you would like mix well. Add your mushrooms to the pan stir fry with onion mix about 2 mins… then add a little more oil if needed and your green beans stir fry about 3-4 mins on med high heat mix sauce and add sauce will start to bubble and thicken  keep stirring to coat well remove from heat and enjoy!  Remember to taste test your green beans you want then to still have a bit of crispness but you may prefer them soft so just cook a bit longer…And remember cooking is not science it should be fun try new recipes and enjoy!

For a light dessert we had a mix of fresh berries with some coconut milk, honey and a dash of cinnamon….yummy….
