Use What You Have On Hand…Create A Meal!

have you ever thought hmmm.. what’s for dinner tonight?  And then decided to create with whatever you have on hand ?  Well that’s what I did!  So I decided veggie taco salad theme…here is what I had on hand… a half of bell pepper, purple onion, green onion, cabbage, fresno pepper, jalapeno pepper, yellow squash, sweet potato, tomato, romaine lettuce, a salad blend, mushrooms, a can of fire roasted tomatoes with green chilies, can of black beans, fresh salsa, chicken broth, veggie broth, garlic, and for a different dish made ahead for tomorrows lunch some mustard greens…

spices I used…cumin, Adobo seasoning, garlic powder, lime, salt, pepper, roasted coriander, chilpotle chili powder…

mild chili powder…

add a little olive oil to a pan…next some chopped onion, chopped bell pepper, 1/2 fresno and jalapeno pepper and 1 clove of garlic  minced…cook till softened.

add squash, mushrooms stir cook 4 mins….in the meantime clean and prick a sweet potato cook in the micro about 4 minutes….

add 1 can of fire roasted tomatoes and green chili…1 Tbs. salsa …and spices…I like it spicy but adjust for your own spice level…1/4 tsp. cumin…1/2tsp. chilpotle…salt/pepper…1/2 tsp mild chile powder…1/4 tsp. Adobo seasoning…2 dashes roasted coriander…1 Tbs. lime juice..

slice sweet potato and peel cut into chunks…

add potatoes and drained rinsed black beans…stir and add 1/2 c. veggie broth and 1/2 c. veggie broth stir cook on med. heat 3 mins… then simmer 3 mins….


add 1 Tbs. minced cilantro…and serve…you could easily turn this into a stew by pureeing 3/4 c. of the veggies and adding 2 cans of broth…

i served over chopped cabbage, and mixed lettuce and tomatoes, and some left over garbanzo beans I had in the fridge…a few plantain chips…because of my special diet no sour cream and cheese but you could add that and some avocado… hope this inspires you to create a meal from what you already have on hand!!!
