Stuffed Poblano Peppers Healthy and Lite

to make these yummy stuffed peppers…first roast your peppers (broil 400) keep turning till all sides blacken and skin bubbles.  Take out and place in a paper bag for 5 to 10 mins. then run  peppers under cool water and carefully peel off skin.  Make a slit on one side seed under cool water dry your pepper with a paper towel.  Filling as follows 1/2 c. minced mushrooms, 1/4 c. minced onion, 1 Tb.minced cilantro, 1/2 c. minced zucchini, 1/2 to 1 fresh minced fresno pepper or jalapeno, 3 cloves of garlic minced… add 2 Tb. evoo to pan med heat…add garlic and onion saute’ 3 mins then add the rest… stir 4 mins.

next put all ingredients to the edge like this…

next add 1 to 1.25 pds. of ground turkey to pan stir and start to brown meat about 3-4 mins…then start mixing everything together.

add your spices depending on your taste and level of spicy-ness…1/4 tsp. Goya Adobo spice, 1/4 tsp ground cumin, 2 dashes roasted ground coriander (by McCormick) 1/2 tsp chilpotle powder, salt & pepper to taste…3 Tb. chicken broth, stir and blend all spices into meat mixture turn heat to low simmer 2 mins….brush a little evoo in roasting dish, place peppers slit side up, fill with meat mixture ( now you can add shredded cheese) I did for my hubby but since no dairy for me none on mine and honestly it doesn’t need it!  Place in oven at 350 degrees for 1o mins.  In the meantime, blend 1 can of fire roasted tomatoes and 2 Tb fresh salsa or whatever brand you like Pace will work..to that add 1/2 tsp. chili powder dash of salt blend till smooth. ( reserve 2 Tb for beans) You can warm tomato mixture up in microwave then pour over peppers and bake 10 more mins.

finished dish served with brown rice/black beans and salad.  To make beans 1 c. rinsed black beans, 2 Tb. salsa I used Fat Tomato Brand Tomatillo Avocado salsa from (Costco) 1 bag steam brown rice, 2 Tb. (reserved tomato sauce) dash cumin , salt and pepper, 1/2 cup chicken broth and 1Tb. minced cilantro bring to boil then simmer 1o-12 min. with lid on.  Enjoy these lite and healthy stuffed poblano peppers you could also use this recipe for stuffed bell peppers!

 for an evening treat I had a green chai tea with coconut milk, agave and 1 Tb. of can pumpkin …yummo!  I told you I would get real inventive on this 6 week diet…hope I gave you some food for thought hee hee….
