Day Five…

Thick Veggie Soup…yum…Veggie broth, organic crushed tomatoes, parsnips, sweet potato, broccoli, red swiss chard, yellow squash, zucchini , onion, red bell pepper, mushrooms, cauliflower, carrots, acorn squash, turnips, string beans, celery…saute onions  with a couple cloves of garlic soften, then add sweet potato, acorn squash, turnips and mushrooms cook for about 5 mins. add  box of veggie broth and can of organic crushed tomatoes, sea salt , pepper , fresh dill, dash garlic powder, and smoked paprika, I also gave a dash of savory herb seasoning, add rest veggies except for swiss chard or( cabbage)…cover simmer for 5-8 mins uncover turn heat to med. add swiss chard cook additional few mins till desired tenderness or crunch of veggies whichever floats your boat! I like a little crunch myself and a squeeze of lemon or lime juice for zest! enjoy.

  2. Well believe it or not the veggie soup is gone I ate the last of it today. But I made a butternut squash soup tonight that is worth bringing a bowl by for!
