this cookbook looks vintage because I use it so much (20 years) complete with stains and great easy and delicious recipes! I was going to make an apple tart out of my Cooking Light Cook Book but forgot to get the ready made pie crust at the store it called for…so fall back on one of our fav’s apple crisp…so Fall…so delish…vanilla ice cream anyone?
golden delicious apples…oops out of rolled oats but I’ve got a package of apples and cinnamon instant good enough…substitute..mix flour, brown sugar, oats, nutmeg, cinnamon, cut in butter top over thinly sliced apples…and bake it up!
dessert was featured first but I did make dinner too! These carrots were so good recipe from Cooking Light… peel and steam carrots… 2 T. butter in pan melt it up…add 1 T. minced fresh ginger, 2 minced garlic cloves…cook 2 minutes… add tender crisp steamed carrots… 1 t. lime rind… 1 T. lime juice, and 1 T. fresh minced cilantro..saute a minute to coat…and ready! Pan sauteed chicken with coarse ground pepper, sea salt, cumin, chilpotle powder, garlic powder, (goya) Adobo all purpose seasoning and topped off with organic fire roasted crushed tomatoes… served with yellow squash and 3 cheese shell pasta.
